Basic Information On Phase 2 Of The South Beach Diet
After two weeks of the strict phase, you begin Phase 2.
Phase 2 is much less restrictive – the main reason for this is that your body should now have overcome some of its insulin resistance. This is beneficial for all, but of major concern to those with diabetes. Diabetics have a problem producing and using insulin. For this reason, the blood sugar goes up, and the insulin does not help the body use the sugar in the blood stream. If the sugar is not used, the blood sugar continues to elevate, sometimes to levels high enough to cause a diabetic coma. At the minimum, the body thinks it has no sugar in the bloodstream so it protects itself, by turning muscle and bones and other parts of the body into sugar – it consumes itself to try to survive. (I lost several teeth and a lot of muscle to this disease before I was diagnosed.)
Although I am not a medical professional, I have been a diabetic for over seven years – so I understand the evils of this disease all too well.
When your body starts making better use of the insulin, the most noticeable change is a marked drop in blood sugar. This is because your body is now using the sugar in the bloodstream to a higher degree. The less sugar that stays in your bloodstream in excess form, the less that will be stored in your body as fat. As a side effect, this diet does seem to help some folks deter type 2 diabetes.
In Phase 2, you start introducing fruits back in to your diet. Some fruits can be eaten regularly, while others, such as raisins, should still be avoided. Strawberries are arguable my own personal favorite – low in carbs and high in vitamins and flavor. If you find that you have some strawberries that aren’t sweet enough, cut them up and sprinkle a little splenda (sucralose) on them to sweeten them up. Be careful as this sweetener is ten times sweeter than sugar!

Other things you reintroduce are low-fat cheeses, and “good oils” such as canola and olive. You also get to add back no sugar added ice cream (in moderation) as well as other treats. This information, including recipes is in the South Beach Diet.
You are supposed to use Phase 2 until you lose down to your desired weight. At that point, you go to Phase 3 – which is a maintenance phase – to maintain your desired weight.
